Unfortunately I don’t have any pictures, by last night I made a huge stir fry for me and my boyfriend. He is on the health food wagon, and so I’m playing with meal plans for the two of us, as well as experimenting a bit more with recipes.
He is a meat eater of note, and so he had a steak to accompany this meal. I had some rice. It was delicious, nutritious and a good way to use up the odd range of vegetables in my fridge. Plus, the added benefit of using no oils at all!
Ginger Garlic Soy Stirfry
- 1tbsp garlic mash
- 1tbsp ginger mash
- 1.5 white onion
- ½ cup broccoli
- 1.5-2 cups cabbage
- 1 red capsicum
- 2 zucchini
- soy sauce
- oyster sauce (though of course adding this removes vegan status, but it can add a nice flavour, if you choose).
And to be honest that was it! It was a very simple throw together, and took about 30 mins from beginning prep to having the meal ready. Soy sauce I didn’t measure, just splashed on and tasted every so often. I like to experiment a lot with Asian dishes, as I find that they are usually low fat and very nutritious with he huge amount of vegetables you can include.
I absolutely stuffed my face with this, and you can be sure I’ll be making it any time I have any left over veggies in the fridge.
